You know it is so difficult to find a baking recipe which:
- Is egg-free (because it is Lent)
- Is super-quick and easy to make
- Won’t end up being a disaster
Finding a recipe that fulfills all the above criteria is certainly no piece of cake (sorry, not sorry).
But thanks to the good souls at Tip Hero, I came across this Chocolate Crazy Cake Recipe on their Facebook Page. And its called crazy for all the right reasons – No eggs, No milk, No butter! No dairy at all! Plus you can make the batter in the same pan you plan to bake in!
The minute I saw the video I knew I had to try it out! It definitely fulfilled the first 2 criteria of my recipe finder checklist. What was left to be crossed off the list was the last criterion.
I assembled all the ingredients and mixed them all together in a bowl. Yes, I used a separate bowl for mixing because I didn’t mind washing that extra dish. This has been the easiest cake batter ever. Just go on adding all the ingredients into the bowl and then mix. Ready in 5 minutes!
Preheated the microwave to 180 degree Celsius, greased the pan and poured in the batter. Now was the real test. The recipe asked to bake it for 35 minutes which is how long it took my cake to bake as well. Then came the literally painful time – waiting for the cake to cool. And then we cut it!
And this cake easily fulfilled the last criterion – of not being a disaster!
It was moist and spongy. It took me by surprise completely, because whenever I have baked without eggs in the past, my cakes tend to get dense and a little hard on the outside. But this wasn’t. It was perfect and even more so with a scoop of vanilla ice-cream!
A must try recipe, even for people who fear baking! It is so easy you can’t go wrong.
